Eggnog Latte - Our Staff Pick for Best Drink to Get You In The Holiday Spirit

We absolutely love our customers! After serving coffee in Carmel for over 30 years, we've built up quite the fan club of "regulars" (aka our caffeine-loving MVPs). Our baristas are so in sync with their daily orders, we’re practically mind readers—sometimes their coffee's ready before they’ve even turned off the car! It’s little things like this that keep our customers and crew coming back to our coffee shops for their daily dose of happiness

This is especially true during the holidays. Traditionally, our Winter Drink Menu debuts on Black Friday, but for those in the know, Christmas comes a little early. We will secretly bring in eggnog a few days before Thanksgiving just for our regulars. 

This year we are featuring rich and creamy eggnog two ways: The quintessential Eggnog Latte and its cousin, the Eggnog Au Lait. For the latte, we pair it with our best selling organic espresso, Cone Peak or if you prefer it caffeine-free, request the organic Decaf Palo Colorado Espresso. For the Au Lait, we suggest our bold organic French roast, Foglifter® blend or organic Defogger® decaf. 

In the spirit of giving, we are sharing a family Homemade Eggnog recipe that you can make ahead in preparation for your Holiday gatherings of friends and family. Our recipe pairs with with espresso and coffee beautifully, but you can also add an alcohol of your choice. Like all good recipes, there is a secret ingredient or two that we like to add that elevates the flavor: ground cardamom adds a floral note and almond extract adds a subtle special something on the finish! JANET'S LUSCIOUS HOMEMADE EGGNOG LATTE

Ingredients

  • 6 egg yolks at room temperature 
  • 1/2 cup granulated sugar
  • 2 cups whole milk 
  • 1 cups heavy cream
  • 1/4 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground cardamom
  • pinch of ground clove
  • 2-3 cinnamon sticks
  • 2 star anise
  • 1 tsp. vanilla extract
  • 1 tsp. almond extract (optional)
  • double shot of Carmel Valley Coffee Roasting Co. Cone Peak espresso (or half a cup of strong coffee, like Foglifter®
  • whipped cream (optional)
  • pinch cinnamon (optional)
  • pinch Maldon sea salt (optional) 

Instructions 

1. In a medium / large bowl, whisk together the egg yolks. Add 2 tablespoons of sugar and whisk thoroughly before adding 2 more tablespoons. Repeat until all the sugar and eggs are combined. Set aside.
2. In a medium sauce pan, over low heat, combine the milk, cream, ground spices and whole spices and whisk together. Heat slowly at first and gradually raise the heat to medium, while constantly whisking. Bring the mixture almost to a boil and remove from the heat. Strain out the star anise and cinnamon sticks. 
3. Temper the egg mixture by slowly ladling 1/2 cup of the hot cream mixture into it, constantly and vigorously whisking. Continue to slowly add another 1/2 cup while continuing to whisk until 2/3 of the hot mixture is whisked into the egg mixture. Now return the the tempered egg mixture back into the sauce pan and stir. Heat until the temperature reaches 160 degrees F. Now you can let it sit/cool.  
4. Whip up some fluffy, creamy homemade whipped cream. We like to use powdered sugar and heavy cream. Adjust the amount of sugar for your personal sweet tooth.
5. When Ready, steam some of the eggnog mixture for your latte. 
6. For the Eggnog Latte: Now it's time to pull a double shot of organic espresso into your favorite mug.
7. Add steamed/hot homemade eggnog
8. Top with whipped cream
9. Add a pinch of cinnamon and a pinch of Maldon sea salt.
For the Eggnog Au Lait: Fill your mug with equal parts strong Foglifter® coffee and hot eggnog and top with a dollop of whipped cream and a pinch of cinnamon and Maldon salt. 

The eggnog can be made ahead and stored in the refrigerator for 5 days. Be sure to bring it to room temperature first, then store in an airtight container. Reheat over medium heat on the stove, or steam it to order on your espresso machine.
